Tuna Tataki with sesame and spices, grilled bok choy and shitake mushrooms

For the marinade
- 1 tbsp sesame oil
- 1 tbsp black pepper
- 1 tbsp red pepper
- 1 tbsp coriander seeds
- 1 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp chopped fresh ginger
For the tuna
- 500g tuna
- 1 dash of olive oil
- 2 tbsp black sesame seeds
- 2 tbsp white sesame seeds
- Bok choy
- Shitake mushrooms
- First prepare the marinade. Using a mortar and pestle, crush the peppercorns and coriander seeds.
- In a bowl, mix all the ingredients for the marinade. Add 4cm tuna slices to mixture. Cover with cling film and marinate at least 2 hours in refrigerator.
- Remove tuna from marinade. Sprinkle the tuna with white and black sesame seeds to form a crust. The tuna slices should be completely covered. Pre-heat the plancha for 5 minutes.
- When the plancha is hot, gently place the tuna slices on the plancha and grill for 3 minutes on each side.
- Lower the heat slightly, add the mushrooms and bok choy and cook for another few minutes.
- Thinly slice the tuna and serve immediately with the mushrooms and cabbage.
